Hi, I'm Jordyn.
I'm a singer/songwriter based in Louisville, KY, with a love for tasty food + drink, interior design, graphic design, & drawing. Found the most beautiful fresh Lion’s Mane @fullcircle.mushrooms in Las Cruces. A friend gifted us some fresh focaccia, so a simple buttery pasta was in order. ☺️

I seared the mushrooms in shallot oil, made a sauce out of butter, garlic, olive oil, white wine, sliced fennel, nutritional yeast, & salty pasta water, added some baby arugula & spinach last minute, and topped it all with fried shallots. Always a plus when your food is also brain food! ✨🍄

When @bigmountainfoods Lion’s Mane Mushroom Crum

When @bigmountainfoods Lion’s Mane Mushroom Crumble is used in place of ground pork in this Tantanmen-style soup, it ROCKS. 🤘

I doubled this recipe so that we could have it with ramen noodles one night, and then switched it up alongside Jasmine rice topped with @yunhaishop Mala Chili Crisp. 🌶

🍄Lion’s Mane Mushroom Crumble + sliced shiitakes
🥣 Shiitake, miso, chicken broth
🥬 Petite Choy Sum
🧄 Garlic & Ginger
🧅Green onions
🥜 Peanut butter & tahini
🌶Broadbean chili paste
🍶Soy sauce, sesame oil, sugar + salt

Been on a rice bowl kick recently because they’re so easy when you’ve got a lot going on, but sooooo satisfying. 🤤🍚🥬

Went a little extra & made our Jasmine rice with coconut milk and a little piece of lemongrass. It smelled SO GOOD when it was done cooking, like Thai Coconut Milk Soup. 🤌

Served the coconut lemongrass rice atop a bed of greens dressed with Yuzu Ponzu, and topped it all with blanched & sautéed broccolini, done Cantonese style, and seared smoky tempeh. ✨

🍲Chilly evenings = warming soup! This kimchi ramen rocked our worlds last night. I was so excited to find Chinese broccoli (Gai Lan) at @sprouts the other day, and it was the perfect addition to this yummy meal. Shiitake mushrooms and crispy air-fried tofu out of the @ninjakitchen Foodi took it over the top. 🤤
