Found the most beautiful fresh Lion’s Mane @full Found the most beautiful fresh Lion’s Mane @fullcircle.mushrooms in Las Cruces. A friend gifted us some fresh focaccia, so a simple buttery pasta was in order. ☺️ I seared the mushrooms in shallot oil, made a sauce out of butter, garlic, olive oil, white wine, sliced fennel, nutritional yeast, & salty pasta water, added some baby arugula & spinach last minute, and topped it all with fried shallots. Been on a rice bowl kick recently because they’r Been on a rice bowl kick recently because they’re so easy when you’ve got a lot going on, but sooooo satisfying. 🤤🍚🥬 Went a little extra & made our Jasmine rice with coconut milk and a little piece of lemongrass. It smelled SO GOOD when it was done cooking, like Thai Coconut Milk Soup. 🤌 Served the coconut lemongrass rice atop a bed of greens dressed with Yuzu Ponzu, and topped it all with blanched & sautéed broccolini, done Cantonese style, and seared smoky tempeh. ✨

I was so excited to find Chinese broccoli (Gai Lan) at @sprouts the other day, and it was the perfect addition to this yummy meal. Shiitake mushrooms and crispy air-fried tofu out of the @ninjakitchen Foodi took it over the top. 🤤
